today's connoisseur is the lovely Mona dog golf who calls
in from her kitchen from occasionally with great recipes. I
love your muffins always, and you've got a new one
to share with us.

You know that cottage cheese is a rage right now,
and you know why because it has an amazing source
of protein. And adding about a quarter of a cup
of cotta cheese into your diet gives you about an
extra fifteen grams of protein. So and if you know
not crazy about the texture, you won't even taste it
because you're just adding extra protein into your muffins. This
is a great muffin, six grams of protein under two
hundred calories. So here's how you do it. You're gonna

preheate your oven first to three hundred and fifty degrees fahrenheit,
line a muffin tin with some silicon muffin cup liners,
and then you're gonna blend your blend your ingredients to
make the batter. So you get your blender out, You're
gonna add one cup of cottage cheese one and a
quarter cups of rolled oats, two eggs, two tablespoons of
maple syrup, one and a half teaspoons of vanilla, two
tea spoons of baking powder, zest of a half a lemon,

and a quarter tea spoon of salt to a blender
and just blend it up. And then what you're going
to do. You can then stir in one cup of
raspberries into the batter, let it sit for five minutes,
and then fill each muffin line or with this batter.
It's a batter plus the raspberry is about two and
a half tablespoons per cup. Sprinkle it with some chopped walnuts.
Bake again for about a half an hour until it's
