This is a dish my 17-year old son suggested I share on this podcast as an easy, faster variation to the ever-popular potato bake. Loaded with sour cream, garlic and cheese this creamy potato recipe is an utterly delicious way to bake potatoes. Just remember to choose starchy potatoes like Russets, Sebagos, Yukon Golds, or King Edwards, as their higher starch content breaks down to create a creamy, thick sauce and soft texture.

THANK YOU Mum who first made this recipe for me more than 40-years ago. I just love the chewy sweetness of the dates in these scones – the ginger ale is optional, you could use soda water, mineral water, lemonade (anything carbonated really) but I love the subtle flavour ginger ale shares with the scone.
